Skin Glow Walnut Brownies

Walnut Brownies
Makes about 16 squares

160g dark chocolate, mint-flavoured preferably (over 80 per cent cocoa solids)
130ml milk of choice
140g coconut oil, plus extra for greasing
150ml maple syrup
1½ tsp vanilla extract
40g raw cacao powder
3 eggs
140g plain spelt flour
1 tsp baking powder
60g chopped walnuts

Preheat oven to 190°C. Grease a brownie tin (30cm x 30cm or thereabouts) and line with baking paper.
Put chocolate, milk, oil, maple syrup and extract in a pot over a medium heat. Stir gently until everything is melted and combined. Remove from the heat for a few minutes before whisking in the cacao powder and eggs. Fold in the flour and baking powder and, finally, add the chopped walnuts. Pour the mixture into the baking tin and cook for 25 minutes. Remove from the tin and leave to cool before cutting into slices.
